I’m a fan of vlogger Sarah Rocksdale. She has a positive attitude and an earnest approach to her videos. I’m not sure how I stumbled upon her channel on YouTube – maybe it was her apartment tour? I do watch a lot of those.
Anyways, she posted a recipe for chicken salad and I wanted to try it. I am always looking for a new way to incorporate vegetables into my diet. Since I actually don’t like most of them. I know that vegetables are great for slowing down your digestion and stopping blood sugar from spiking. Celery is one of the vegetables that I like, so I made a list of the ingredients and went grocery shopping.
I wasn’t exactly sure how this chicken salad would turn out. Grapes? Bacon? I wanted to try it, anyways. I don’t like tomatoes so I thought that the grapes would be more palatable. And I’m always happy to include bacon!
I followed her ingredients fairly closely. I bought regular mayo instead of paleo mayo, because I was shopping at No Frills. Her instructions don’t say how much mayo to use, so I tried half a cup.
How did it turn out? YUMMY!
I am so pleased with how it turned out! The bacon was a bold addition, and the grapes didn’t feel out of place at all. I think I guesstimated the right amount of mayonnaise. I will be making this recipe again!
